This past weekend I made two incredibly delicious desserts, Butter Pecan Bundt Cake and Lemon Blossoms. They couldn't be any easier to make, so you have to try them!!!
Butter Pecan Bundt Cake
*1 Butter Pecan Cake Mix
*1 container of coconut pecan frosting
*1 C milk
*1 C oil
*4 eggs
1. Combine cake mix, milk, oil, and eggs together and then add frosting and mix some more.
2. Pour into bundt pan and bake at 350 degrees for 50 minutes.
It is so moist! The great thing about this recipe is that you can mix and match different cake mixes and frostings.
Lemon Blossoms
Muffins
*1 pkg of yellow cake mix
*1 pkg of instant lemon pudding mix
*4 eggs
* 3/4 C oil
Glaze
*4 C confectioner sugar
*1/2 C fresh lemon juice
*1 lemon zested
*3 tbs vegetable oil
*3 tbs water
1. Mix cake mix, pudding mix, eggs, and oil together and pour into mini muffin tins, filling each only half way up.
2. Bake at 350 degrees for 12 minutes.
3. While muffins are baking, combine confectioner sugar, lemon juice, zest, oil, and water together to make the glaze. (Make sure you sift the conf sugar to get rid of little lumps.)
4. As soon as the muffins come out of the oven dip them into the glaze and place on a cooling rack or baking sheet to dry. (I recommend letting them set for at least an hour before placing them in containers.)
If you love lemons then these will be right up your alley!! Paula Deen made them the other day, and I literally sat with my mouth open the entire time. They are deeeelish!!! (And super duper easy to make!!!)
